The Conch House - This is the restaurant at the marina you will be picked up from. They will cook your catch! It is a great atmosphere & serves great drinks and food. Happy hour is M-F 3-7pm. They have live music on the weekends at the lounge and is a local hangout! The Conch House Resort is a go-to place for people looking to stay “on the island” and do some fishing with Fishardy Charters.

Mojos Tacos - Mojos tacos is a true St. Augustine style taco. They are right up the street from the marina & there is a good chance you’ll catch Capt. Jacob getting lunch their after your charter.

St. Augustine Fish Camp - The best restaurant in town. The atmosphere, food, service, drinks. Just go.


Things to do

  • For a great sample of what St. Augustine has to offer, book a tour with St. Augustine Experiences. They offer a food & cocktail tour, a beer tour, and several others. It is well worth the money!

  • Climb the Lighthouse & check out their museum.

  • Walk around downtown & visit the Fort (Castillo de San Marco) *It is not worth paying the money to go inside the fort. You’ll see and learn 90% of what you need to by walking around the outside for free.

  • Visit the Alligator Farm. Especially if you have children. They serve beer.

 

RECIPES

Blackened Redfish - The standard. Go to Publix, get some blackening seasoning, season liberally, and pan sauté. Great in tacos!

Grilled Kingfish - Marinate a few pieces in Italian dressing for 30 min to an hour. Grill on med-high for 6 min on one side then another 3 on the other. It should be about done & will be delicious.

Smoked Kingfish - Season with Everglades Fish & Chicken. Smoke at 220 for 3 hours or so. You can eat it like that or turn it into fish dip. Ask the Capt. for his fish dip recipe, if he is feelin nice, you’ll get it.


tips for All other fish -

Pan frying or deep frying: use peanut or vegetable oil (no olive oil)

Fish Piccata: Just like chicken piccata but with fish. You’ll need white wine, lemons, capers, butter, and garlic. Pan sauté the fish then remove, deglaze the pan with white wine, then add butter, garlic & capers. Cook down, add some more butter, then pour over the fish. Thank me later.
