Fish Recipes!

Blackened Fish - The standard. Go to Publix, get some blackening seasoning (Redfish Magic), season liberally, and pan sauté. Great in tacos!

Grilled Kingfish - Marinate a few pieces in Italian dressing for 30 min to an hour. Grill on med-high for 6 min on one side then another 3 on the other. It should be about done & will be delicious.

Fish Piccata - Season white fish (like flounder or snapper), dredge lightly in flour, then pan-sear in butter and olive oil until golden and cooked through. Remove the fish and make a quick sauce in the same pan with lemon juice, capers, garlic, and a splash of white wine, then pour over the fish and serve.

Smoked Kingfish - Season with Everglades Fish & Chicken. Smoke at 220 for 3 hours or so. You can eat it like that or turn it into fish dip. Ask the Capt. for his fish dip recipe, if he is feelin nice, you’ll get it.
